Hi, jo! Typically, if a coffin is nailed shut, it means the body was severely mangled and in no condition to be shown publicly at the funeral or viewing. It's what you'd call a "closed casket ceremony". These ceremonies are usually the case in car accidents and related cases where the bodies come back in a state that would be disturbing for family members and loved ones to see. Or really, for anyone to see. I'm pretty sure Stephenie Meyer was referring to this type of service for Jacob's mom. As far as Edward saying that vampires were responsible for more accidents than humans thought, he was probably referring to murders, disappearances. In my opinion, I don't think a vampire was responsible for Jacob's mother's death. I chose to think it was just a run-of-the-mill tragic car accident. I hope that helps answer some of your questions!

wait wait..... What book says this? I have read the saga many times and don't remember this... Did I skip something or forgetting I read it... I just re read Eclipse a few days ago so i know its no in there. Please help me out. Also is the old days, people thought that if you nail a coffin shut, the remains will stay inside and not be the "living dead". However i highly dough that if any vampire was buried that they would be stuck there. Haha! Its an amusing thought to me.
